Plant Description

Inga edulis, widely known as the ice cream bean tree, is a fast-growing evergreen leguminous tree with long, pendulous pods that contain a sweet, cottony white pulp enveloping large black seeds. Native to South America, this nitrogen-fixing species can reach up to 30 meters in height, with spreading branches, pinnate leaves, and elegant cream-colored pom-pom flowers that attract pollinators. Its striking fruit pods can measure over 1 meter long and are highly prized for their soft, vanilla-like flavor—hence the name.
